To complement the complex flavors of the buccatini, Richardson recommends a merlot, such as his Chateau Julien. Another good match for the dish's Cajun spice, garlic and cream sauce is Domaine Santa Duc Cotes du Rhone--a robust wine that has a "meaty" quality. But what about the Veggie Peanut Pasta with its nutty taste that's a tad to aggressive to be classified as subtle? Think sweet and head for a fruity Riesling, Richardson says.
